    Golden brown soft biscuits filled with choc chips and peanut butter. Feel free to replace the dark choc chips with white choc - or mix them both!

    Ingredients
    Makes: 12 biscuits

    • 340g butter, softened
    • 1 1/4 cups (275g) packed brown sugar
    • 1 1/4 cups (250g) white sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 4 cups (500g) plain flour
    • 2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 cup (170g) dark chocolate chips
    • 1 cup (255g) peanut butter chips (see footnote)

    Directions

    1. Preheat oven to 180 degrees C.
    2. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla.
    3. Combine the flour, bicarbonate of soda and salt; gradually stir into the creamed mixture. Finally, stir in the chocolate and peanut butter chips. Drop rounded spoonfuls onto an unprepared baking tray.
    4. Bake for 8 to 10 minutes in the preheated oven. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    Peanut Butter Chips

    If you can't find the peanut butter chips (and yes they can be hard to find in Australia, unless you order online, or through a specialist US outlet) replace with 1 cup (250g) peanut butter. Try the crunchy over the smooth!

    The cookies were good. The only concern I had was how much flour was in the recipie. I had to add a little extra moisture such as an egg and milk to moisten them up.  -  14 Dec 2008  (Review from Allrecipes USA and Canada)

    This cookie recipe was easy and tasty. On accident I only used 1 cup of sugar and they were still very good. My family likes nuts so I also added 1 cup of pecans.
