The raves you'll get about these cookies are guaranteed! Feel free to play around a little with the ingredients; replace the plain flour for all wholemeal flour, and pecans can be used in place of the walnuts.


Makes: 36 cookies

  • 165g margarine
  • 1 cup (200g) white sugar
  • 1 cup (145g) light brown sugar
  • 1 1/2 teaspoons vanilla essence
  • 2 eggs
  • 2 cups (180g) wholemeal plain flour, sifted
  • 1 cup (125g) plain flour, sifted
  • 3/4 teaspoon bicarb soda
  • 1 teaspoon salt
  • 2 cups (335g) dark chocolate chips
  • 1/2 cup (60g) walnuts, chopped (optional)

  1. Preheat the oven to 180 degrees C. Generously grease baking trays.
  2. In a medium bowl, cream together the margarine, white sugar and brown sugar until smooth. Stir in the vanilla and eggs.
  3. Combine the wholemeal flour, plain flour, bicarb soda and salt, gradually blend into the creamed mixture. Fold in chocolate chips and walnuts if using.
  4. Place rounded spoonfuls onto the prepared baking trays. Bake for 8 to 10 minutes. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
