    This icing recipe will become your best friend. You can use it for all your baking needs, cakes and cupcakes alike.

    Ingredients
    Makes: 4 cups icing

    • 1 cup (250ml) milk
    • 1/4 cup (30g) plain flour
    • 100g copha
    • 125g butter
    • 1 cup (200g) white sugar
    • 1 teaspoon vanilla essence

    Directions

    1. In a small saucepan, combine the milk and flour. Cook over medium high heat until boiling. Remove from heat and set aside to cool.
    2. When the milk mixture is cool, add the copha, butter, sugar and vanilla. Beat with an electric mixer for 10 to 12 minutes, scraping the bottom of the bowl occasionally.
