    Buttercream icing, perfect for cupcakes through to wedding cakes. Try piping on the top or spread with a flat-edged knife across the cake top and sides.

    Serves: 20 

    • 430g butter
    • 1kg icing sugar
    • 1/2 cup (125ml) milk
    • 2 teaspoons clear imitation vanilla essence

    1. Cream the butter together until soft and smooth.
    2. Gradually add the sugar, milk, and vanilla essence. Mix until smooth.
