    This is one of those great breakfast burritos, that you can treat the whole family to on the weekend. Try cooking all the ingredients on the BBQ - even warming the tortillas before serving. Especially tasty with grated cheese melted inside the burrito.

    Ingredients
    Serves: 10 

    • 5 large potatoes, peeled and diced
    • 450g pork sausage meat
    • 6 eggs
    • 10 (20cm) flour tortillas

    Directions
    Preparation:15min  ›  Ready in:15min 

    1. Boil the potatoes in a large saucepan until they are soft, but not mushy. Drain and return to the saucepan.
    2. In a large frypan brown the sausage until there is no pink left. Drain, cut and set aside.
    3. Coat a small frypan with vegetable cooking spray. Over medium heat, scramble the eggs.
    4. Mix potatoes, sausage and scrambled eggs thoroughly and place into the flour tortillas.

    Great for a Sunday breakfast! No matter what you stick inside a tortilla it's bound to be good. I cut the recipe in half and decreased the amount of potatoes and increased the amount of eggs. Instead of boiling the potatoes I pan fried them with a bit of butter, garlic and onion to give them some crispiness and flavor. I scrambled my eggs with a bit of milk to get them nice and fluffy.     Rated 4 stars because it's good, but way better with hashbrowns or tater tots, or no potatoes at all. I used Jimmy Dean sausage, and lots of cheese inside the burrito, not on top! For one pan recipe without potatoes, cook sausage, add eggs, scramble til done, add to tortillas add cheese and tator tots if desired, roll up and enjoy.
