Feta Cheese and Watermelon Salad

    A light, refreshing and healthy salad recipe. Perfect for a summer day, to accompany a family BBQ or picnic.

    Serves: 8 

    • 3 tablespoons olive oil
    • 2 teaspoons white balsamic vinegar
    • 1/2 teaspoon Kosha salt
    • 150g grape tomatoes, halved
    • 3 cups rocket
    • 1 cup sliced red onion
    • 1kg watermelon, cubed
    • 100g feta cheese, cut into cubes

    1. Whisk together the olive oil, vinegar and salt in a large mixing bowl. Add the tomatoes, rocket and onions; toss to coat. Gently stir in the watermelon and feta cheese to serve.

    Kosher salt

    This is the American term for flaked, or larger crystals of salt than the common table salt. Try sea salt which is easily purchased from Australian grocery stores and supermarkets.

    I love this, a couple things I did different were; I couldn't find just arugula, so I used a spring mix bag salad, and with the dressing I put about a quarter of a pack of Splenda in it, just to sweeten it up a little. Great salad.  -  10 Mar 2011  (Review from Allrecipes USA and Canada)
