Using vermicelli noodles, fresh tomato, black olives, capsicum and prepared salad dressing you can make a chilled noodle salad that is delicious with a glass of wine.

Serves: 6 

  • 230g vermicelli noodles
  • 1 tomato, diced
  • 1/2 cup diced green capsicum
  • 190g sliced black olives
  • 1/2 cup diced red onion
  • 2 tablespoons salad herbs
  • 1/2 cup Italian dressing

  1. In a large saucepan of salted boiling water, cook noodles according to packet directions. Rince under cold water then drain.
  2. In a large bowl, combine the noodles, tomato, capsicum, olives and onion.
  3. Whisk together the salad herb and salad dressing. Pour over salad and toss gently. Refrigerate 4 hours or overnight to blend flavours.
