If you really like rolled oats, then this is the bikkie for you. Plenty of rolled oats, lots of rich brown sugar and tons of tasty dark chocolate chips. Enjoy.

Serves: 24 

  • 250g margarine, softened
  • 1 cup (220g) packed brown sugar
  • 1/2 cup (100g) white sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 1/2 cups (190g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups (250g) rolled oats
  • 1 1/2 cups (250g) dark chocolate chips

  1. Preheat oven to 180 degrees C.
  2. Beat margarine and sugars until creamy. Add eggs and vanilla: beat well. Combine flour, bicarb soda, cinnamon and salt; add to margarine mixture then mix well. Stir in oats and chocolate chips. Mix well.
  3. Drop by rounded tablespoonfuls onto ungreased baking trays. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on baking tray; remove to wire rack. Store in airtight container.
