Bacon and Cottage Cheese Noodle Bake

    This is a Hungarian dish which combines egg noodles, sour cream, bacon and cottage cheese. It's excellent!

    Serves: 8 

    • 500g packet egg noodles
    • 3 1/2 slices smoked bacon
    • 2 cups sour cream
    • 375g cottage cheese
    • 1 pinch salt to taste

    1. Preheat oven to 180 degrees C.
    2. Bring a large pot of lightly-salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain well.
    3. Cook the bacon in a frypan over medium-high heat until crisp; drain, crumble and set aside.
    4. Place the drained noodles in a large baking dish. Stir the sour cream into the noodles. Spoon the cottage cheese evenly over the top of the noodle mixture. Sprinkle the crumbled bacon over the top; season with salt.
    5. Bake in preheated oven until the cottage cheese softens, 3 to 5 minutes.

    I'm sorry for the few stars but even though American folks seem to like this recipe it is not a túrós csusza. That's primarily because cottage cheese does not exist in Hungary. We use "túró" (hence the name) which is a slightly curdier version of what you buy in the US as farmers' cheese. We don't mix the pasta with sour cream, rather the cheese itself, and top it with the sour cream before putting it in the oven. Alternatively, the sour cream is mixed in with the cheese.     This is an amazing meal! This recipe is the authentic way of making it, don't change a thing as it doesn't need it. My Hungarian parents always made this and it taste awsome! You could skip the oven part and just warm cottage cheese and sour cream on stove top with the noodles. I made this for my family and my daughter loves it!
