Turkey in Cream Sauce

    A great use for leftover turkey, simmered in cream sauce and then served over pasta, rice or toast. Enjoy!

    Serves: 4 

    • 2 tablespoons butter
    • 3 fresh mushrooms, sliced
    • 1 tablespoon plain flour
    • 1 cup chicken stock
    • 1/2 cup heavy cream
    • 1 cup chopped cooked turkey
    • 1/3 cup frozen peas, thawed
    • salt and pepper to taste

    1. In a large frypan over medium low heat, cook butter until golden brown. Saute mushrooms until tender. Stir in flour until smooth. Slowly whisk in chicken stock, and cook until slightly thickened. Stir in cream, turkey and peas. Reduce heat to low, and cook until thickened. Season with salt and pepper.

    I was looking for a way to use up our leftover turkey from Christmas and found your recipe. It's so quick and easy and it tastes delicious!     This is my mothers' recipie exactly - I love that you mentioned, "on pasta - on rice but on buttered toast" this is not very good for you =- add fresh spinach on top or something - but it is delicious.. heavenly.  -  03 Feb 2016
