    If you like ceviche, try this traditional Melanau recipe for red snapper marinated in lime, ginger, onions and chilli.

    Serves: 4 

    • 1 yellow onion, chopped
    • 1 red onion, chopped
    • 1 tablespoon minced fresh ginger
    • 1 fresh red chilli, finely chopped
    • 1 tablespoon grated lime zest
    • 2 limes, juiced
    • 2 skinned red snapper fillets, cut into thin strips
    • 1 pinch salt to taste

    1. Combine the yellow onion, red onion, ginger, chilli, lime zest and lime juice in a glass or ceramic bowl. Gently stir in the red snapper and season to taste with salt. Cover and refrigerate until the snapper turns white and opaque, about 15 minutes. Serve cold.
