Combine the yellow onion, red onion, ginger, chilli, lime zest and lime juice in a glass or ceramic bowl. Gently stir in the red snapper and season to taste with salt. Cover and refrigerate until the snapper turns white and opaque, about 15 minutes. Serve cold.
