Tortellini with Chillies

    For those who like some spice in their life, try jazzing up tortellini with some green chilli. Very easy to prepare.

    Serves: 4 

    • 250g cheese-filled tortellini
    • 1 1/2 cups spaghetti sauce
    • 100g diced green chillis
    • 1 tablespoon chopped fresh coriander
    • 1/8 teaspoon ground cumin
    • 1 cup grated mozzarella cheese

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. In a large pot of salted water boil tortellini until al dente. Drain well.
    2. In a 1-1/2 litre saucepan combine sauce, green chillies, coriander and cumin. Simmer over medium-low heat for 5 minutes.
    3. Place tortellini on a serving platter and pour tomato sauce mixture evenly over pasta. Sprinkle cheese over sauce and serve.

    I thought it was a bit too spicy with the chiles, but then again, I used jalapenos. Also, mozzarella may not be the best choice of cheese because it tends to get chewy once heated. Cheddar or parmesan might be better.  -  12 Feb 2001  (Review from Allrecipes USA and Canada)
