Tomato Soup Cinnamon Spice Cake

    This is a quick and easy spice cake to make with condensed tomato soup. Delicious, and no one will guess the secret ingredient.

    Ingredients
    Serves: 18 

    • 2 1/4 cups cake flour
    • 4 teaspoons bicarb soda
    • 1 teaspoon baking powder
    • 1 1/3 cups white sugar
    • 1 teaspoon ground allspice
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 (300g) tin condensed tomato soup
    • 1/2 cup margarine
    • 2 eggs
    • 1/4 cup (65ml) water

    Directions
    Preparation:30min  ›  Cook:40min  ›  Ready in:1hour10min 

    1. Preheat oven to 180 degrees C. Grease and flour a 20x30cm pan.
    2. Measure flour, bicarb soda, baking powder, sugar and spices into a large bowl. Add condensed soup and margarine. Beat at low to medium speed for 2 minutes, scraping sides and bottom of bowl constantly. Add eggs and water; beat 2 minutes more, scraping bowl frequently. Pour batter into prepared pan.
    3. Bake 35 to 40 minutes. Coo in pan for 10 minutes; remove and cool completely on rack. Frost with cream cheese icing.

    This seems to have too much baking soda in it. That is all you can taste when you eat the cake. The basic flavor seems pretty good but it is overwhelmed by a bitter baking soda taste that cannot be ignored.     This cake is delicious! It tastes just like gingerbread. I substituted applesauce for the shortening and topped the cake with whipped topping. You can't even tell there is a can of tomato soup in it!  -  16 Feb 2004  (Review from Allrecipes USA and Canada)
