Sausage and Tomato Sauce

This is a very meaty sauce with a goodly amount of garlic and basil. Serve over your favourite pasta.


Serves: 32 

  • 1/4 cup olive oil
  • 1 kg Italian sausages, casings removed
  • 2 large onions, chopped
  • 1/4 cup chopped garlic
  • 1 (185g) tin tomato paste
  • 2 (800g) tins whole peeled tomatoes
  • 1 cup (250ml) water
  • 1 cup chopped fresh basil
  • salt and pepper to taste

  1. In a large saucepan heat oil and saute sausages until brown and crumbled, about 6 minutes. Add onion and garlic to pot and saute about 8 minutes. Mix in tomato paste, tomatoes, water and basil. Bring to a boil. Break up tomatoes. Reduce heat to medium and simmer until thickened, about 45 minutes. Season with salt and pepper.
