Vegemite and mushroom jacket potatoes

    One of the best toppings for jacket potatoes ever!! So tasty you'll end up having them for lunch every day!

    Serves: 2 

    • 2 large mushrooms, chopped
    • 1 large baking potato
    • 1 tablespoon vegemite
    • 1 tablespoon butter
    • 1 cup of grated cheese

    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Bake the potato to your liking- uncovered or wrapped in foil – for about 20 minutes or till done.
    2. Slice halfway into the potato lengthways. Mix the butter and vegemite together and spread inside the potato.
    3. Add the mushrooms to the potato. Sprinkle over the cheese.
    4. The potato can then be returned to the oven/microwave to melt the cheese if preferred or you can just eat as is.
