Herbed Steaks with Mushrooms

    This is one of my favourite ways to cook steak, with a spice crust and a topping of mushrooms. Serve with mashed potato.

    Serves: 4 

    • 2 teaspoons paprika
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon dried thyme
    • 500g boneless sirloin, cut 2cm thick
    • 250g sliced fresh mushrooms
    • 1/4 cup minced eschalot
    • 2 tablespoons butter
    • 2 tablespoons red wine
    • 1 tablespoon vegetable oil
    • salt and pepper to taste

    1. In a small bowl, mix together the paprika, salt, pepper, garlic powder, onion powder and thyme. Sprinkle onto each side of the steaks, pressing in so it adheres. Set aside.
    2. Melt the butter in a frypan over medium-high heat. Add the eschalots; cook and stir for about 1 minute. Add the mushrooms and cook for a few more minutes, until tender. Stir in the red wine and cook until most of the liquid has evaporated. Remove from the heat and keep warm.
    3. Heat the oil in a separate frypan over medium-high heat. Fry steaks for 5 to 7 minutes per side, or to your desired degree of doneness. Remove to a plate and let rest for a few minutes. Top with mushrooms and serve.

    This was very good, im not giving a five star though because I strongly feel that any "sauce" that is intended for the top of steaks should be cooked after the steak is done in the wonderful brown bits in the pan. Thats what i did, after cooking the steak i removed, let rest, added onion and mushrooms, red wine, salt, pepper, and at the end tablespoon of butter. Great on top of the steak.     I've made this recipe 3 times in the last month. My daughter liked it so much, so requested this for her birthday dinner. The red wine adds a lot of flavor to the mushrooms. I found I like a mixture of different mushrooms.
