It seems like this recipe has a lot of ingredients but it's really easy to make and quite delicious. Great to take to a picnic or party.

    Serves: 8

    • 500g tri-colour pasta
    • 2/3 cup (170ml) olive oil
    • 3 tablespoons white wine vinegar
    • 1/4 cup fresh basil leaves
    • 2 tablespoons grated Parmesan cheese
    • 1 1/4 teaspoons salt
    • 1/4 teaspoon ground black pepper
    • 1 red capsicum, julienned
    • 1 yellow capsicum, julienned
    • 1 orange capsicum, julienned
    • 1 medium fresh tomato, chopped
    • 75g black olives
    • 250g mozzarella cheese, cubed

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min

    1. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes until al dente and drain.
    2. In a blender or food processor blend the olive oil, white wine vinegar, basil, Parmesan cheese, salt and pepper until smooth.
    3. In a large bowl toss together the cooked pasta, dressing mixture, red capsicum, yellow capsicum, orange capsicum, tomato and olives. Top with mozzarella cheese to serve.

Very good, although I omitted the olives and served cold. The dressing was very light and delicious- however it seemed to need more or a binding agent to the pasta. Next time I will add more parmesian cheese, which would hopefully do the trick. Definately going to use this recipe again!  -  25 Sep 2005  (Review from Allrecipes USA and Canada)

I would give this more stars if I could. UNBELIEVABLY good. I followed the recipe almost exactly, except added another can of black olives, which was perfect and I did use a little more salt and parmesan cheese that recipe called for. sooo delicious!!!  -  22 Jun 2009  (Review from Allrecipes USA and Canada)

Really good. I served this cold since I made it a day ahead, but it was still very tasty. I love the fresh basil dressing!  -  11 Dec 2007  (Review from Allrecipes USA and Canada)
