Moist Chocolate Brownies with Chocolate Icing

    These are very moist brownies which are almost like a rich dense cake. I'm sure you will love them like I do!

    Serves: 12 

    • 3 cups (375g) plain flour
    • 3 cups (600g) white sugar
    • 3/4 teaspoon salt
    • 375g butter
    • 4 1/2 tablespoons cocoa powder
    • 1 1/2 cups (375ml) water
    • 1 1/2 teaspoons bicarb soda
    • 3 eggs
    • 1 cup (250ml) buttermilk
    • 1 teaspoon vanilla essence
    • 125g butter
    • 3 tablespoons cocoa powder
    • 6 teaspoons milk
    • 4 cups icing sugar
    • 1 teaspoon vanilla essence

    1. Preheat oven to 180 degrees C. Grease a Swiss roll tin.
    2. In a large bowl, stir together the flour, sugar and bicarb soda. In a small saucepan, bring 375g butter, 4 1/2 tablespoons cocoa and 1 1/2 cups (375ml) water to a rapid boil. Pour over the flour mixture and stir until combined. Add the eggs, buttermilk and vanilla essence; mix well.
    3. Spread batter evenly into the prepared baking pan. Bake in the preheated oven for 20 minutes. Cool before icing.
    4. Icing: In a small saucepan melt 1/2 cup of butter. Stir in the icing sugar, 3 tablespoons cocoa powder, milk and 1 teaspoon vanilla, in that order. Beat by hand until creamy then spread onto cooled sheet of brownies. Cut into squares and enjoy.

    Very easy to make, very rich (I would recommend cutting it into small squares). Lovely and moist. Recipe makes a lot of brownies, so it's good for a large gathering.  -  28 Jul 2012


    I debated between 3 and 4 stars, and went for the higher rating because the product is good. However, this is NOT a brownie. This is a very dense cake. I doubled the chocolate at other's suggestion and felt the chocolate-ness of it was perfect. I also substituted one cup of brown sugar for one of the cups of white sugar. As the other Texas Brownie (cake) suggests cinnamon, I a tsp of cinnamon to this recipe. I also used the frosting recipe from Texas Brownies I.
