Buttery Chocolate Cake with Evaporated Milk

    This is a delicious chocolate cake with a rich buttery taste. It's melt in your mouth! Use your favourite chocolate icing.

    Makes: 2 cakes

    • 1 3/4 cups (250g) self raising flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon bicarb soda
    • 1 teaspoon salt
    • 1 1/2 cups (300g) white sugar
    • 125g butter
    • 1 1/4 cups (300ml) evaporated milk
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 70g dark chocolate, melted
    • 1/4 teaspoon red food colouring

    1. Preheat the oven to 180 degrees C. Line the bottoms of two 23cm round cake tins with baking paper.
    2. Sift together flour, baking powder, soda, salt and sugar.
    3. Stir butter just to soften then add to flour mixture. Add only 1 cup of the evaporated milk until all flour is dampened. Beat for 2 minutes at medium speed, or 300 vigorous strokes by hand.
    4. Add to the flour mixture the eggs, vanilla, melted chocolate, food colouring, and remaining 1/4 cup milk. Beat 1 minute in mixer, or 150 strokes by hand.
    5. Pour the batter into the prepared cake tins. Bake in the preheated oven for 25 to 30 minutes. Cool.

    Absolutely delicious! This cake is silky smooth as can be, fairly dense and moist yet not 'heavy' or too rich. I think that's due in part to the cake flour and in part to the sifting. As the men who tried it said, it's not 'gaggingly sweet' like they feel most chocolate cakes are. I also used the chocolate torte frosting as recommended, and sprinkled chopped pecans on top of the frosting in the middle layer.
