Sweet Polenta Cake

This is a great sweet polenta cake which is even better the next day eaten with butter and honey. Enjoy!

My variation on these was to make them as corn muffins, and baking them at 425 degrees for 15 mins. They turned out the fattest, lightest, yummiest corn muffins I have ever tasted! Definitely a keeper!

After trying a few other cornbread recipes, this is the one I am sticking with. I made no adjustments. It was sweet, moist and absolutely delicious. A real keeper.

Tweeked it a bit and this was a HIT! I changed the following..used 2c. med. grind Bob Red Mill Corn Meal, 2c. flour, 1c. melted butter, cut milk to 2c and added 1 can Cream Style Corn. Very moist, truly a cross between corn bread and corn pudding. Might even try to up the milk to 2 1/4c for additional moisture. The med. grind gives it some crunchy corn, adding to uniqueness & texture. Looked a long time, this is FINALLY A KEEPER!
