Sugar Free Apple Cake

    This apple cake uses brown sugar substitute but it is equally good make with sugar if you have no dietary restrictions.

    Serves: 12 

    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon salt
    • 2 eggs
    • 3/4 cup brown sugar substitute
    • 1 1/2 cups unsweetened apple sauce
    • 1 teaspoon vanilla essence
    • 1/2 cup raisins

    1. Preheat oven to 180 degrees C. Spray a loaf tin with cooking spray.
    2. Sift together flour, baking powder, bicarb soda, cinnamon, nutmeg and salt. Set aside.
    3. Beat the eggs until light and add sugar substitute. Add apple sauce and vanilla.
    4. Add flour mixture and beat until smooth. Fold in raisins.
    5. Pour batter into loaf tin. Bake for about an hour, or until a toothpick inserted into cake comes out clean.

    This cake came out exceptionally well and tastes great! I layered the bottom of my springform pan with apples in concentric circles. When removed from the pan, the top of the cake looked beautiful with the fresh baked apples. I sprinked some cinnamon on top and it's perfect for guests.
