Cauliflower and Carrot Soup

    Cauliflower is a sweet vegetable and as such can make a rich, tasty and healthy soup as shown in this example where it teams up with carrots.

    Serves: 6 

    • 30g butter
    • 1 clove garlic, crushed
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon freshly ground black pepper
    • 1 1/2 teaspoons salt
    • 6 cups water
    • 1 head cauliflower, chopped
    • 1 large carrot, diced
    • 3 spring onions, trimmed and chopped
    • handful chopped fresh parsley

    1. In a large pot over medium heat, melt butter. Add garlic and gently cook until soft then stir in nutmeg, pepper and salt and cook 30 seconds. Add the water and cauliflower. Bring to the boil, reduce heat, cover and simmer 20 minutes or until cauliflower is tender.
    2. In a small saucepan over medium heat, cook carrot with water to cover until just tender. Drain and reserve.
    3. Purée cauliflower soup in a blender or food processor. Add carrot, spring onion and parsley. Serve.

    Altered ingredient amounts. Used stock instead of water, about a cup less than the recipe said  -  22 Jul 2009
