Spaghetti and Broccoli Stir Fry

This meal is ready in minutes and very filling. Soy sauce adds a depth of flavour to the vegetables.


Serves: 4 

  • 250g spaghetti
  • 2 tablespoons olive oil
  • 2 cloves crushed garlic
  • 1 onion, sliced into thin rings
  • 2 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups julienned carrots
  • 2 tablespoons soy sauce
  • salt to taste
  • ground black pepper to taste

  1. Bring a large pot of water to a boil. Cook spaghetti pasta in boiling water until al dente. Drain.
  2. Meanwhile, heat oil in a large frypan or wok over medium-high heat. Cook garlic in oil for 1 minute. Stir in onion and cook until soft. Stir in chicken and cook until juices run clear. Mix in the broccoli, cauliflower and carrots then cook for 2 to 5 minutes, stirring frequently. Season with soy sauce, salt and pepper.
  3. Toss pasta with vegetables and serve warm.
