Rice Pudding, Portuguese Style

This rice pudding couldn't be simpler and is just deliciously rich and creamy. I like to sprinkle it with a little cinnamon just before serving.

Ingredients
Serves: 8 

  • 1 cup caster sugar
  • 3 cups low-fat milk
  • 1 cup raw white rice
  • 2 eggs, beaten

Directions
Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

  1. In a large saucepan over high heat, combine sugar and milk. When bubbles form at the edges, stir in rice and reduce heat to medium low. Cook 60 minutes, stirring often, until rice is tender. Do not allow to boil.
  2. Remove from heat and vigorously stir in beaten eggs, a little at a time, until well incorporated. Serve warm.
