Garlic Spinach Pasta

    This is a very easy pasta with the assertive flavours of garlic and chilli. You can adjust the spiciness to your taste.

    Serves: 8 

    • 500g seashell pasta
    • 300g frozen chopped spinach
    • 2 tablespoons olive oil
    • 7 cloves garlic, minced
    • 1 teaspoon chilli flakes
    • salt to taste

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Bring a large pot of lightly salted water to a boil. Add pasta and spinach and cook for 8 to 10 minutes or until pasta is al dente; drain and reserve.
    2. Heat oil in a large frypan over medium heat. Add garlic and chilli flakes; saute for 5 minutes or until the garlic turns light gold. Add cooked pasta and spinach to the frypan and mix well. Season with salt and toss; serve.

    I made this one with whole wheat pasta and it tasted great. I cut the amount of pasta in half and used 9 oz of fresh spinach. I didn't boil my spinach; instead I sauteed it with the garlic and red pepper flakes. The only other change I made is adding freshly grated parmesan cheese on top.     I tried this tonite and it was very good.I used 12 oz.of pasta and also used 10oz. of fresh spinach,rough chopped ,which I added to pasta the last 2 min. of cooking.I sauted some slivered lean pork,with the oil & garlic.I also added grated parmesan to finished dish.Chicken or smoked sausage would be good too.  -  02 Apr 2003  (Review from Allrecipes USA and Canada)


    I rated this recipe a 5 for it's ease in preparation and fabulous flavor. I made some mild variations. I used whole wheat penne pasta instead of the shells. I also added 1 (14.5 oz) can of diced tomatoes when I added the cooked pasta and spinach to the skillet.
