Spaghetti Cucumber Salad

    This is a deliciously tangy pasta salad which is perfect for picnics. It's best made the day before.

    Ingredients
    Serves: 8 

    • 500g spaghetti
    • 1 cup (250ml) zesty Italian dressing
    • 1 tablespoon Italian seasoning
    • 1 bunch spring onions, chopped
    • 1 cucumber, chopped
    • 2 tomatoes, chopped
    • 60g sliced black olives

    1. In a large pot of salted boiling water cook pasta until al dente. Drain and cool under cold water.
    2. Combine cooked pasta with Italian dressing, Italian salad seasoning, spring onions, cucumber, tomatoes and black olives. Toss to coat and refrigerate overnight before serving.

    I loved this! I played with it a little. My husband wasn't thrilled with the idea of using spaghetti noodles, so I used the spirals instead. After reading a comment about the lack of flavor, I adde two envelopes of Italian seasoning dressing along with 16oz Zesty italian dressing. It was sooooo good.     I make a similar salad to this, but I like using angel hair pasta, rather than spaghetti, and break in thirds before cooking. Also try adding a package of pepperoni cut into quarters.....YUMMY!  -  28 Jun 2002  (Review from Allrecipes USA and Canada)
