Spaghetti Cucumber Salad

This is a deliciously tangy pasta salad which is perfect for picnics. It's best made the day before.

Serves: 8 

  • 500g spaghetti
  • 1 cup (250ml) zesty Italian dressing
  • 1 tablespoon Italian seasoning
  • 1 bunch spring onions, chopped
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 60g sliced black olives

  1. In a large pot of salted boiling water cook pasta until al dente. Drain and cool under cold water.
  2. Combine cooked pasta with Italian dressing, Italian salad seasoning, spring onions, cucumber, tomatoes and black olives. Toss to coat and refrigerate overnight before serving.
