Mexican Cheesy Chicken Lasagne

This is a spicy lasagne-style dish which uses tortillas instead of lasagne pasta. Very easy and cheesy!

Serves: 6 

  • 3 cups chopped, cooked chicken breast meat
  • 2 tablespoons butter
  • 2 large onions
  • 1 teaspoon chopped fresh chilli
  • 2 tablespoons minced garlic
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 2 cups spaghetti sauce
  • 2 cups tomato puree
  • 1/2 cup fresh salsa
  • 500g grated mozzarella cheese
  • 500g grated Cheddar cheese
  • 15 corn tortillas

Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

  1. Preheat oven to 180 degrees C.
  2. In a large frypan, brown grated chicken in butter or margarine. Add onions, chilli, garlic, basil and oregano. Then add the spaghetti sauce, tomato puree and salsa. Stir all together. Cover frypan and simmer for 10 minutes over low heat.
  3. In a lightly greased 20x30cm baking dish, place a layer of tortillas, then a layer of the chicken/sauce mixture, then a layer of mozzarella cheese. Repeat layers twice, then top with Cheddar cheese and bake in the preheated oven for about 1 hour, until cheese is bubbly.
