This is a simple icing and very good which incorporates golden syrup. Excellent when used with a devil's food cake.

Serves: 12 

  • 3 egg whites
  • 1 pinch salt
  • 1 1/4 cups light golden syrup
  • 1 teaspoon vanilla essence

Preparation:10min  ›  Ready in:10min 

  1. Beat egg whites until soft peaks are formed, then add a dash of salt and beat until firm peaks are formed. In a sauce pan or microwave, heat golden syrup until boiling. Slowly drizzle the golden syrup into the egg whites while beating at high speed. Once entirely incorporated, continue beating at high speed for approximately 6 to 7 minutes. Beat in vanilla.
