Instant Noodles with Carrot and Mushroom

    Instant noodles are made into more of a meal through the addition of carrots, mushrooms and egg. Filling and easy.

    Serves: 1 

    • 2 1/2 cups water
    • 1 carrot, sliced
    • 4 fresh mushrooms, sliced
    • 1 (90g) packet instant noodles with flavour packet
    • 1 egg, lightly beaten
    • 1/4 cup (65ml) milk

    1. In a medium saucepan bring the water to a boil over high heat. Stir in the carrot and mushrooms and boil for about 7 minutes. Add the noodles and the flavouring packet; stir to break up the noodles. Reduce heat to medium and simmer for 3 minutes. Slowly pour in the egg and stir for 30 seconds until the egg has cooked. Stir in the milk.

    Slightly healthier? Actually it is slightly more unhealthy. IT has 506 calories, 217mg of cholesterol 1774 mg of sodium, and 67 grams of carbs. The name should have been slightly tastier ramen noodles.  -  28 Aug 2010  (Review from Allrecipes USA and Canada)
