Seven Minute Icing

    A classic icing. Due to its marshmallow-like consistency, be sure your cake is completely cooled before you ice it.

    Serves: 18 

    • 2 cups white sugar
    • 3 egg whites
    • 3 tablespoons light golden syrup
    • 3 tablespoons cold water
    • 1 teaspoon vanilla essence

    Preparation:5min  ›  Cook:7min  ›  Ready in:12min 

    1. In the top of a double boiler, combine the sugar, egg whites, golden syrup, water and vanilla. Place over boiling water and beat with an electric mixer on high speed for 7 minutes, or until icing forms peaks when beaters are raised. Remove from heat. Use immediately to ice a cooled cake.

    What a failure - waste of a good cake - so annoyed right now - I really hate tipping food down the waste... oh well now onto buttercream to try and salvage my daughters birthday cake  -  01 Jan 2017


    I love the frosting and when my children were young, I always made this frosting.However, the last two times i made the frosting the sugar did not dissolve all the way and it tasted like grains or sugar. What did I do wrong? Thanks  -  04 Jul 2008  (Review from Allrecipes USA and Canada)
