Pita with Fried Potatoes and Egg

    A quick and easy breakfast, that is loaded with diced potatoes and scrambled eggs all packed in half a hot large pita. Such a simple way to get your breakfast.

    Serves: 2 

    • 1 large pita bread, cut in half
    • 1 tablespoon olive oil
    • 2 medium potatoes, cooked and diced
    • 2 eggs, beaten
    • salt and freshly ground black pepper, to taste

    Preparation:1min  ›  Cook:6min  ›  Ready in:7min 

    1. Preheat oven to 180 degrees C. Place pita bread in oven to warm.
    2. Heat oil in a frying pan over high heat. Add potatoes and cook until lightly browned, about 5 minutes. Reduce heat to medium then add eggs. Mix gently until eggs are firm, about a minute. Season with salt and pepper. Remove pita from oven and stuff with potato and egg mixture. Serve immediately.
