    A good pasta sauce has to cook for a long time. Optional ingredients include pork chops, sausages or pork mince.

    Serves: 6 

    • 1 yellow onion, chopped
    • 4 cloves garlic, minced
    • 220g cubed beef stew meat
    • 85g tomato paste
    • 1 (800g) tin crushed tomatoes
    • 1 pinch dried parsley
    • 1 pinch dried basil
    • 1 pinch fennel seed
    • salt and pepper to taste

    1. Put a small amount of olive oil in a large saucepan and saute onions and garlic until caramelized. Add stew meat and cook well, then tomato paste until paste has browned. Mix in the crushed tomatoes, and season with parsley, basil, fennel, salt and pepper. Simmer 6 to 7 hours, stirring occasionally.
