    This is a great summer salad with the powerful flavours of chilli, garlic, coriander, vinegar and lemon juice.

    Serves: 11 

    • 2 cups spiral pasta
    • 1 onion, chopped
    • 1 red capsicum, chopped
    • 185g sliced black olives
    • 3 tomatoes, diced
    • 1 tablespoon diced green chilli
    • 1/3 cup distilled white vinegar
    • 1/4 cup chopped fresh coriander
    • 1 1/2 teaspoons garlic salt
    • 1/3 cup lemon juice
    • 1/2 cup (125ml) vegetable oil
    • 1 tablespoon white sugar
    • 1 tablespoon chilli powder

    1. In a large pot with boiling salted water cook pasta until al dente. Drain.
    2. Meanwhile, combine chopped onion, capsicum, olives, tomatoes and green chilli in a large bowl.
    3. In a small bowl, whisk together vinegar, coriander, garlic salt, lemon juice, vegetable oil, sugar and chilli powder.
    4. Mix cooked pasta with vegetables. Toss with coriander dressing and serve.
