    This is my bread machine recipe for Russian black bread. It has a little cider vinegar in it to give it bite - with cheese it's marvelous.

    Ingredients
    Serves: 12 

    • 1 1/2 cups (375ml) water
    • 2 tablespoons cider vinegar
    • 2 1/2 cups (340g) bread flour
    • 1 cup (100g) rye flour
    • 1 teaspoon salt
    • 2 tablespoons margarine
    • 2 tablespoons dark golden syrup
    • 1 tablespoon brown sugar
    • 3 tablespoons unsweetened cocoa powder
    • 1 teaspoon instant coffee granules
    • 1 tablespoon caraway seed
    • 1/4 teaspoon fennel seed
    • 2 teaspoons active dry yeast

    Preparation:5min  ›  Cook:3hours  ›  Extra time:1hour cooling  ›  Ready in:4hours5min 

    1. Place ingredients into the bread machine in order suggested by the manufacturer.
    2. Use the whole wheat, regular crust setting.
    3. After the baking cycle ends, remove bread from pan, place on a cake rack and allow to cool for 1 hour before slicing.
