These are very easy chocolate balls made from chocolate chips, vanilla wafers, pecans and rum. Keep chilled.
1 cup dark chocolate chips
1/4 cup (60ml) golden syrup
1/2 cup (125ml) rum
2 2/3 cups (480g) crushed vanilla wafer biscuits
1/2 cup (60g) icing sugar
1 cup (110g) chopped pecans

In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips stirring frequently until smooth. Remove from heat and stir in golden syrup and rum. Combine the vanilla wafer biscuit crumbs, icing sugar and pecans; stir into the chocolate mixture until well blended. Chill until firm, about 1 hour.
Roll dough into 3cm balls. Refrigerate in an airtight container until serving.
