Walnut Pineapple Cake

Pineapple walnuts and cinnamon team up for a winning combination. The icing is optional, the cake is pretty good without it!

Ingredients
Serves: 24 

  • 2 1/4 cups (280g) plain flour
  • 2 teaspoons bicarb soda
  • 2 cups (440g) white sugar
  • 2 teaspoons ground cinnamon
  • 2 eggs
  • 1 (440g) tin crushed pineapple with juice
  • 1 cup (125g) chopped walnuts
  • 3/4 cup (125g) icing sugar
  • 2 tablespoons skim milk

Directions
Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

  1. Preheat oven to 180 degrees C. Grease and flour a 23x33 cm cake tin.
  2. In a large bowl, mix together the flour, sugar, bicarb soda and cinnamon. Add the eggs, pineapple and nuts, mix until well blended. Pour into the prepared cake tin.
  3. Bake for 45 minutes in the preheated oven, until a skewer inserted comes out clean. Leave to completely cool before icing.
  4. In a small bowl, stir together the icing sugar and milk until smooth, spread over cooled cake.
