Walnut Pineapple Cake

Pineapple walnuts and cinnamon team up for a winning combination. The icing is optional, the cake is pretty good without it!
2 1/4 cups (280g) plain flour
2 teaspoons bicarb soda
2 cups (440g) white sugar
2 teaspoons ground cinnamon
1 (440g) tin crushed pineapple with juice
1 cup (125g) chopped walnuts
3/4 cup (125g) icing sugar
2 tablespoons skim milk
- Preheat oven to 180 degrees C. Grease and flour a 23x33 cm cake tin.
- In a large bowl, mix together the flour, sugar, bicarb soda and cinnamon. Add the eggs, pineapple and nuts, mix until well blended. Pour into the prepared cake tin.
- Bake for 45 minutes in the preheated oven, until a skewer inserted comes out clean. Leave to completely cool before icing.
- In a small bowl, stir together the icing sugar and milk until smooth, spread over cooled cake.
