    This is a great no-bake cheesecake for Rocky Road lovers! Garnish with chocolate chips and more miniature marshmallows if you like.

    Ingredients
    Serves: 12 

    • 1 cup (110g) chocolate biscuit crumbs
    • 3 tablespoons unsalted butter
    • 1 (7g) packet gelatine
    • 1/4 cup (60ml) cold water
    • 450g cream cheese, softened
    • 3/4 cup (150g) white sugar
    • 1/3 cup (30g) unsweetened cocoa powder
    • 1/2 teaspoon vanilla essence
    • 2 cups (100g) miniature marshmallows
    • 1/2 cup (60g) chopped walnuts
    • 1 cup (250ml) thickened cream

    Directions
    Preparation:25min  ›  Extra time:2hours chilling  ›  Ready in:2hours25min 

    1. Melt the butter or margarine and combine with the biscuit crumbs. Press mixture into bottom of 23cm springform pan. Bake at 180 degrees C for 10 minutes.
    2. In a small saucepan, soften gelatine in water; stir over low heat until dissolved.
    3. In a large bowl, combine cream cheese, sugar, cocoa and vanilla; blend with an electric mixer on medium speed. Gradually add gelatine mixture and blend. Fold in whipped cream, 2 cups marshmallows and nuts; pour onto crust. Chill until firm.

    This recipe is awesome!!!! Not only does it look exquisite, but it tastes wonderful!!! It is also quite easy to make. I buy a premade Oreao crust though.     Yummy! Very chocolatey! I didn't have heavy cream so I used "dream whip" instead and it turned out really nice. Less calories too! : ) I also substituted pecans for the walnuts. Great for a hot summer day. I will make this again.  -  25 Jul 2007  (Review from Allrecipes USA and Canada)

    A bit disappointing given all the great ingredients. The various textures (chocolate chips, nuts, marshmallows) distracted from the creaminess you expect from a cheesecake. I thought this would be good for kids and adults alike. Several of the kids didn't finish and, as an adult, it wasn't worth the calories.  -  11 May 2008  (Review from Allrecipes USA and Canada)
