Apple and Gherkin Salad
The simple mixture of tart apples, onion and dill gherkins make for a very unusual but delicious salad that is the perfect accompaniment to pork.
Ingredients
Serves: 6
- 120g white sugar
- 1/2 cup (125ml) distilled white vinegar
- 3 tart apples, peeled, cored and julienned
- 120g onion, chopped
- 90g dill gherkins, chopped

- In a small bowl, combine sugar and vinegar until sugar is dissolved.
- In a salad bowl, mix together apples, onion and gherkins. Add vinegar mixture and toss to combine. Refrigerate until thoroughly chilled.
