Easy Ravioli Lasagne

    Everyone loves lasagne but sometimes it seems so much trouble to make. This easy recipe uses frozen ravioli.

    Serves: 6 

    • 2 cups (500g) ricotta cheese
    • 280g frozen chopped spinach - thawed, drained and squeezed dry
    • 1 1/2 cups (180g) grated Romano cheese
    • 2 eggs
    • salt and pepper to taste
    • 1/4 cup (60g) spaghetti sauce
    • 700g frozen cheese ravioli
    • 1/2 cup (120g) spaghetti sauce
    • 1/2 cup (60g) grated Romano cheese

    1. Preheat an oven to 190 degrees C. Spray a 20cm square baking dish with cooking spray and set aside.
    2. Mix the ricotta cheese, spinach, 1 1/2 cups Romano cheese, eggs, salt and pepper to taste in a bowl.
    3. To assemble the lasagne, spread 1/4 cup of spaghetti sauce in the bottom of the prepared baking dish then place frozen raviolis on top in a single layer. Spread about 1 cup of the ricotta mixture over the raviolis. Repeat the layers 3 more times, ending with a layer of frozen raviolis. Spread with 1/2 cup spaghetti sauce and sprinkle remaining 1/2 cup of Romano cheese on top. Cover the dish with aluminium foil.
    4. Bake in the preheated oven for 40 minutes until the casserole is bubbling. Then remove the aluminium foil and bake another 10 minutes to brown the cheese on top. Let sit for 10 minutes before serving.

    This wasn't spectacular. It was easy, which I liked. After reading the reviews, I doctored it up by adding parsley and garlic powder to the ricotta mixture. The dish didn't bake as stated. When I took it out of the oven, it was still cold in the middle. So I had to put it back in and it ended up taking over an hour to bake.
