Quick Pesto Pizza

    This is a really quick and easy pizza that uses a premade pizza base. Cut into bite-size pieces for a great party nibble.

    Serves: 24 

    • 250g ricotta cheese
    • 4 tablespoons grated Parmesan cheese
    • 100g shop-bought pesto
    • 1 ready made pizza base
    • 2 tomatoes, sliced
    • 4 tablespoons grated Pecorino Romano cheese

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Preheat oven to 230 degrees C.
    2. In a small bowl combine ricotta and parmesan cheeses.
    3. Spread pesto over the pizza base. Spread the ricotta and parmesan over the pesto then layer the tomatoes over the cheese. Sprinkle with Pecorino.
    4. Bake for 12 to 15 minutes.

    Something else. Delicious! For starters, I chose to use a crust recipe from this site. Then for the Pesto, I used a recipe from this site and it in itself was a 5* - simply amazing. To the Ricotta I added 1t minced garlic. I spooned 3T pasta sauce from a jar onto the Pesto (we love sauce) before laying down the Ricotta blend. I topped with plum tomatoes, diced cooked chicken, 1/2 tin drained artichoke hearts, sliced fresh mushrooms, 1/2 of a diced red capsicum, 1/2 of a diced green capsicum & a small tin of sliced black olives. Baked on pizza stone. Reduced cooking temp by a bit and increased cooking time to 30 mins to enable heating of so much topping. We couldn't get over how fabulous this pizza tasted - like something from a restaurant! The crust was perfect and the Pesto made the recipe!     Maybe I had boring pesto or something but my homemade-pizza-loving family didn't like these and if I make them again I'll layer on some pizza sauce.  -  08 Oct 2008
