Corn Chip Battered Fish

    I love the flavour of corn chips and they make a great coating for baked fish. Experiment with different flavours of chips.

    Serves: 4 

    • 1 cup finely crushed corn chips
    • 1/2 teaspoon chilli powder, or to taste
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 egg, beaten
    • 1 tablespoon cooking oil
    • 4 (200g) fillets whitefish, washed and patted dry

    1. Preheat oven to 230 degrees C. Line a baking tray with aluminium foil and spray lightly with cooking spray.
    2. In a shallow dish, mix together crushed chips, chilli powder, salt and pepper.
    3. In another bowl, mix egg and oil. Dip fish in egg and oil mixture then coat with chips mixture. Place fish on foil-lined baking tray and sprinkle any leftover chip mixture over the fish.
    4. Bake in a preheated oven until fish is flaky and white in the middle, 10 to 12 minutes.

    Recipe to note to previous reviewer: This is my recipe and I actually use Cool Ranch Doritos in this. Try different flavors and see which one you like best.
