Instant Noodle Salad

I like to get creative with my instant noodles! This is a quick and easy salad and side dish, give it a try!

Serves: 12 

  • 4 (85g) packets chicken flavoured instant noodles
  • 1 cup (120g) diced celery
  • 1 (225g) tin water chestnuts, drained and sliced
  • 1/2 red onion, diced
  • 1/2 green capsicum, diced
  • 100g frozen green peas
  • 1 cup mayonnaise

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Break noodles and cook as directed on packet, without adding the seasoning mix. Drain and rinse noodles under cold water.
  2. In a large bowl, combine the noodles, celery, water chestnuts, red onion, capsicum and peas.
  3. Prepare the dressing by whisking together the mayonnaise and noodle seasoning mix. Pour over noodle mixture and toss until well coated. Refrigerate until chilled and serve.

oh why do so many of the recipes on here have capsicum in them, they are the one food I am allergic too. this salad sounds so nice, any ideas what i could replace the capsicum with? - 23 Nov 2014
