Raisin Coconut Squares

    Rainis, coconut and sour cherries are combined in these delicious, not too sweet bars. A favourite snack in our family.

    Ingredients
    Serves: 16 

    • 1/2 cup (110g) brown sugar
    • 125g butter
    • 1/2 cup (60g) plain flour
    • 3/4 cup (60g) rolled oats
    • 2 eggs
    • 1 cup (220g) brown sugar
    • 1/2 cup (60g) plain flour
    • 1/4 teaspoon salt
    • 1/2 teaspoon baking powder
    • 1 teaspoon vanilla essence
    • 3/4 cup (125g) raisins
    • 1/2 cup (45g) shredded coconut
    • 1/2 cup (120g) pitted sour cherries, drained with liquid reserved

    Directions

    1. Preheat the oven to 180 degrees C.
    2. In a medium bowl, mix together 1/2 cup of brown sugar, butter, 1/2 cup of flour and oats until crumbly. Press into the bottom of a 20cm square pan. Bake for 15 minutes in the preheated oven.
    3. In the same bowl, mix together the eggs, 1 cup of brown sugar, 1/2 cup flour, salt, baking powder and vanilla until well blended. Stir in the raisins, coconut and cherries, adding a little bit of the cherry juice to keep it from becoming stiff. Spread over the baked crust in the pan.
    4. Bake for 30 minutes in the preheated oven, or until firm and lightly browned. Cool and cut into bars.

    I didn't have the cherries and I only had a little butter so I used coconut oil for the remaining 1/2 cup...and it was still great! Nice flavor and texture. I will definitely be making these again.  -  14 Jul 2014  (Review from Allrecipes USA and Canada)
