Chocolate Raisin Peanut Bars

    These bars have a sweet baked crust and are then coated with a layer of chocolate, peanut butter and raisins.

    Serves: 24 

    • 1 cup (200g) white sugar
    • 250g butter, softened
    • 1/4 cup (60ml) molasses
    • 1 teaspoon vanilla essence
    • 1 egg yolk
    • 2 cups (250g) plain flour
    • 1 cup (145g) raisins
    • 1 cup (145g) salted peanuts
    • 1/3 cup (85g) peanut butter
    • 1 1/2 cups (250g) dark chocolate chips

    1. Preheat oven to 180 degrees C.
    2. In a medium bowl, cream together the sugar and butter. Stir in the molasses, vanilla and egg yolk. Add flour, mix until combined. Press dough into the bottom of a 20x30cm baking dish. Bake for 20 to 25 minutes, until golden brown.
    3. In a 2 litre saucepan, combine raisins, peanut butter and chocolate chips. Melt over medium-low heat, stirring constantly. Spread evenly over the baked crust and refrigerate until set, about 1 to 2 hours. Cut into bars and serve.

    Despite the 2-stars, I do have to say the "crust" to these bars - is pretty good!! I might use the crust part of this recipe again - with a different topping - not sure what...However, we didn't care for the chocolate - raisin topping at all. Also - the salted peanuts - I just sprinkled those over the top, at the very end - since it wasn't specified in the recipe. Thanks anyway! PS - I much preferred the absolutely terrific Peanut Brittle Cookies by this same try them!!!!!  -  11 Oct 2004  (Review from Allrecipes USA and Canada)
