    The pretzels add a great crunchy coating that sticks to the fish when frying. The flavour is excellent and these fillets serve well alone or as a fish sandwich.

    Ingredients
    Serves: 4 

    • 1 litre oil for frying
    • 3/4 cup (90g) plain flour
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 450g frozen cod fillets, thawed
    • 2 eggs
    • 3/4 cup crushed pretzels

    Directions
    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Heat the oil in a deep fryer to 180 degrees C.
    2. Mix the flour, salt and pepper in a large resealable plastic bag. Place cod in the bag and gently shake to coat. Place eggs and crushed pretzels in two separate shallow dishes. Dip dusted cod in the eggs then in the crushed pretzels.
    3. Fry crumbed fish 10 minutes in the preheated oil, turning once, until golden brown and easily flaked with a fork.

    This was VERY good! I pan fried it in a deep skillet, 5 minutes per side, and it came out perfectly. I was worried the larger pieces of pretzel wouldn't stay on, but they did. The coating was wonderfully crunchy. Will make again!  -  25 Aug 2005  (Review from Allrecipes USA and Canada)

    Followed the recipe, except used talapia instead of cod & boy where these good! Thought the seasoning was perfect. Was worried that they may fry too long because they got fairly dark, but, came out nice and crunchy & perfect--not dry. I don't know if it makes a huge difference but, after I egg/coated the fish, I let them rest for about 5-10min. before frying--I just think they set up better.     This was a great way to coat fish!! It turned out great! All I had to do was tell my kids that it had pretzels on it and they were all for it!
