Prawn and Tomato Broil

This is a great fast way to serve prawns. Try serving it over pasta as a scampi sauce - my family loves it!


Serves: 4 

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 450g large prawns, peeled and deveined
  • 2 tomatoes, chopped
  • 1/2 cup (120ml) white wine
  • 120g grated mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley

  1. Preheat the grill and set the oven rack about 15cm from the heat source.
  2. Heat the oil in a large, oven-proof frypan over medium heat; add the garlic and cook until lightly browned, about 1 minute. Stir in the prawns and the tomatoes. Cook just until the prawns turn pink, 3 to 5 minutes. Pour in wine; simmer for 2 additional minutes.
  3. Top prawns with mozzarella cheese and grill until the cheese is melted and golden. Sprinkle with Parmesan cheese and dried parsley before serving.
