Quick Peanut Soup

    This is a deliciously spicy soup for peanut lovers! Not only does it taste great, it's ready in twenty minutes.

    Serves: 4 

    • 4 cups (1 litre) chicken stock
    • 1 green chilli, seeded and minced
    • 1/2 green capsicum, chopped
    • 1/2 onion, chopped
    • 150g unsweetened crunchy peanut butter

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. In a large saucepan add stock and chilli and bring mixture to the boil. Stir in capsicum and onion and return to the boil. Reduce heat to low, cover and let simmer until vegetables are tender, about 10 minutes.
    2. Reduce heat to lowest possible temperature; add peanut butter and cook, stirring constantly, until peanut butter is melted and mixture is well blended.
