Berry and Peach Salad with Cardamom

A scrumptious topping for ice cream, pikelets or pancakes, this fresh fruit salad uses ripe peaches, late summer berries, sweet honey and aromatic cardamom.

Serves: 4 

  • 3 fresh ripe peaches
  • 800g blackberries
  • 380g strawberries, hulled and sliced
  • 3-4 tablespoons honey
  • 1/2 teaspoon ground cardamom

  1. Bring medium saucepan of water to the boil. Add peaches and blanch for 30 seconds. Drain and transfer to a medium bowl. Cover with cold water and cool. Drain, peel and slice.
  2. In a medium bowl, combine peaches with blackberries, strawberries, honey and cardamom. Toss together and refrigerate until ready to serve.
