Pork Chops Fried with Feta and Rosemary

    30 minutes

My favourite way to cook pork chops is to season them with herbs and lemon juice and then fry them with a feta cheese topping.

    Serves: 4

    • 1 teaspoon crushed dried rosemary
    • 1 teaspoon dried basil
    • 1 teaspoon finely diced garlic
    • 1 pinch black pepper
    • 2 tablespoons olive oil
    • 4 pork chops
    • 1 cup (250ml) fresh lemon juice
    • 1/2 cup crumbled feta cheese with basil and sundried tomatoes

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min

    1. In a small bowl stir together rosemary, basil, garlic and pepper.
    2. Heat olive oil in a large frypan over medium heat. Dip pork chops in lemon juice and sprinkle both sides with herb mixture. Place pork chops in frypan and sear both sides, about 7 minutes per side. Reduce heat to low. Sprinkle feta on top of chops; cover frypan and cook until cheese begins to melt, about 5 minutes.

Yum! I mixed the lemon juice (1/2 cup) and seasonings together and marinated the chops for an hour rather than just dipping. I crumbled the feta and added it to the chops after I plated, and it melted just enough by the time we ate. I served them with Greek Lemon Roasted Potatoes and asparagus lightly poached in roasted garlic chicken broth. Fantastic!  -  30 Mar 2007  (Review from Allrecipes USA and Canada)

If you are looking for an excellent pork/feta recipe PORK CHOPS w/ FRESH TOMATO, ONION, GARLIC & FETA (from this site) is the way to go. It puts this dish to shame. The key is to use thick cut chops.  -  06 Jan 2006  (Review from Allrecipes USA and Canada)
