Cuban Lemon Chicken

The orange juice and lemon juice give this delicious chicken a sweet, pungent flavour. Serve with white rice.


Serves: 4 

  • 6 tablespoons olive oil, divided
  • 6 cloves garlic, minced
  • 2 onions, chopped
  • 1/2 cup (125ml) orange juice
  • 1/2 cup (125ml) lemon juice
  • 1/4 cup (65ml) white wine
  • 1 (2 kg) whole chicken, cut into 4 pieces
  • salt and pepper to taste

  1. Preheat oven to 180 degrees C.
  2. Heat 3 tablespoons of the oil in a medium frypan over medium heat. Add the garlic and saute for 1 minute; set aside.
  3. In a separate medium bowl, combine the remaining oil, onion, orange juice, lemon juice and wine. Add the heated garlic and oil to this and mix well.
  4. Place chicken pieces in a 20x30cm baking dish and pour the juice mixture over the chicken, coating well.
  5. Bake for 1 hour, basting occasionally with the sauce.
